There are different types of food allergies

The development of food allergies is due to many factors, two of which are in our control; exposure to the problem food and frequently of consuming the problem foods

  • Classic Allergies

Classic or immediate onset allergies may occur following a few exposures to the food regardless of how frequently it is consumed, but can also be due to increased exposure to the food. No matter how long this food is avoided, a reaction may result when it is eaten again. Reactions usually occur within minutes after eating a food. Hence, it is relatively easy to trace the reaction to a certain food. Strawberries, shellfish or peanuts are well-known offenders, although any food can cause a response.

  • Delayed Allergies

A food that causes delayed response may come and go in cycles depending upon whether the food is eaten or avoided. This type of food allergy is much more common and accounts for many of the symptoms listed in the table below. Delayed allergies usually result from eating too much of a certain food too frequently over a period of time. Since reactions often occur hours or days after consuming a particular food, the relationship between symptoms and food can be difficult to recognize.

Food intolerances involve the digestive system. Food allergies involve the immune system. With a food allergy, even a microscopic amount of the food has the potential to lead to a serious or life-threatening reaction called anaphylaxis.
